School may be starting back but it’s still summer outside! With the summer still in full swing, you’re probably still spending as much time as you can in your backyard. While you’re enjoying the summer nights in a fenced-in yard, you might find yourself wanting some snacks. Instead of busting open a bag of chips or finding a candy bar, find something a little more summery. We’ve gathered a few summer snacks with little prep time to enhance these long evenings and warm nights.
Watermelon Salad
In the same vein as summery mixes like chicken, tuna, or fruit salad, the watermelon salad takes a refreshing summer crop and enhances it. By cubing watermelon slices and mixing them with a dressing of lime juice and olive oil, feta cheese, and fresh mint, you’ve created a minimalistic summer salad with fresh ingredients.
S’mores
S’mores aren’t just for camping trips. Many people have bonfires during the long summer nights and there’s no reason you can’t break out the marshmallows, chocolate, and graham crackers. Add fun twists like peanut butter, Nutella, or caramel for an individualized flavor.
Mango-Pineapple Salsa
Give these refreshing fruits a Southwest twist by adding lime juice, cilantro, and red onion. Dip with tortilla chips and enjoy by the pool or while you watch the kids play. Take it a step further by adding jalapeno to bring the heat.
Frozen Yogurt Bark
Spread yogurt mixed with honey on a baking sheet, add fresh fruit and granola and freeze it. It’s as simple as that. When frozen, cut into squares (or break apart) and freeze until ready to eat. Grab a few as a snack on the way out the door to enjoy a warm evening in your backyard.
These easy-as-pie summer snacks can make your backyard patio feel like a party zone. Try these or another one of your favorites this summer as the temperature climbs.
